CHICKEN STROGANOFF

Russia has a large ethnic and cultural diversity due to its vast area which leads to different kinds of cooking traditions. It being one of the coldest countries the use of grains like wheat, millet, barley & rye and meats like beef, chicken and fish in its preparations is extensive and specially prepared to keep them warm.
Russian vodka and beer have a large following all over the world and so does this yummylacious chicken dish called STROGANOFF ..
INGREDIENTS

• 500 grams chicken breast, cleaned and cut into cubes

• 1 teaspoon paprika

• 6 cloves of garlic, minced

• 2 tablespoons all purpose flour

• 1 large onion, chopped

• 2 tablespoons butter

• 1 tablespoon olive oil

• 2 tablespoons Worcestershire sauce

• 3 tablespoons ketchup

• 2 tablespoons English mustard paste

• 1 cup crushed or puréed tomatoes

• 1/2 a cup red wine

• 1/2 a cup Cream

• Salt to taste

• Chopped coriander to garnish
INSTRUCTIONS

1. In a large bowl, mix the chicken cubes with the salt, the paprika and the flour until all the chicken is coated.

2. In a large skillet over medium high heat, heat the olive oil and the butter and sauté the onion and garlic until translucent

3. Add the chicken and cook until the chicken is browned on all sides

4. Add the Worcestershire sauce and the red wine

5. Add ketchup , mustard paste and cook for a minute and also add the crushed tomatoes and stir until everything blends together

6. Check to see if the chicken is cooked through. If it isn’t, lower the heat and let it simmer until the chicken is done. If it is, stir in the cream and let the stroganoff cook .

7. Sprinkle some chopped coriander to garnish and serve hot over a bed of pan fried noodles or pasta !!

Masala Squid Rings 

INGREDIENTS :

500 gms Squid cleaned and cut into medium rings or if using frozen ready to cook packeted ones it comes already cut into rings and should be thoroughly thawed (here I am using ready to cook breaded squid rings )

2 Chopped onion

2 Chopped tomatoes or puréed

2 teaspoons Ginger- garlic paste

1/2 teaspoon Pepper powder

¼ teaspoon Cinnamon powder

2 teaspoons Coriander powder

1 teaspoon Chilli powder

1/2 teaspoon Turmeric powder

1/2 teaspoon Garam masala powder to taste Salt to taste

Oil
PREPARATION :


Heat oil in a pan to fry the squid rings and keep aside. Add chopped onion. Saute till they turn almost brown in colour. Add the ginger-garlic paste .Then add all the spice powders and saute for a minute. Add tomatoes and cook till oil separates. Add the squid and mix well. Cover and cook for a minute. Add salt. Also add half a cup warm water .Remove the lid and cook till the water content evaporates and we get a thick consistency .. the squid is done. Switch off heat. Transfer to a serving dish and serve with fried rice or steamed rice .

CREAMY EGG CURRY 🐣🐣

A CREAMY, TANGY EGG CURRY THAT’S MADE IN A JIFFY AND ABSOLUTELY DELICIOUS TO EAT.

Eggs are a staple in my home 🤗

INGREDIENTS (SERVES 2):

• 2 eggs, hard boiled

• 2 med tomatoes or ½ cup tomato puree

• 1/4th  cup fresh cream

• 2 hot green chillies

•  2 medium onions, finely chopped

• 5-6 cloves of garlic, finely chopped

• 1 tbsp of grated ginger strands

•  ½ tsp paprika pwd (reduce quantity if using a hot variety)

• ½ tsp pepper pwd

• 1 tsp dried oregano

• Salt to taste

• 1 tsp olive or vegetable oil

• 1 tsp butter

PREPARATION :


1. Set the eggs to hard boil and while it boils chop the vegetables.

2. Make a smooth tomato purée

3. Peel the skin off the eggs , heat 1 tbsp oil in a wok or pan and just sauté the eggs for a minute till they are golden pink. Strain out and keep aside.

4. In the same wok add a tbsp of butter, the chopped onions , sauté for a min till it turns pink. Then add garlic followed by ginger and fry till they are golden.

5. Then add the pureed tomatoes, paprika powder and dry oregano and let it cover cook for 3-4 minutes on low flame.In the meanwhile cut the eggs into two halves lengthwise.

6. Finally stir in the cream, dress with salt to taste and add pepper powder. If it is too thick just add a little warm water and bring it to a boil. Gently drop in the eggs and cover cook on low flame for only a minute. Remove from heat, garnish with dry herbs or fresh coriander as per choice and serve hot with toasted garlic bread or garlic Nan or Parathas or simple Tawa Rotis 🤗

Salami slices

Cheese slices

Onions finely chopped

Chilly flakes

Mixed dry herbs as per choice

Mint leaves for garnish

And tooth picks to hold it together .

CLaSsIC DeViLLeD EgGS 😈🐣😈

Ingredients
eggs

mayonnaise

yellow english mustard paste

salt

black pepper

chilli flakes or paprika powder for the garnish

Directions :

• Place eggs in a single layer in a saucepan and cover with enough water that there’s 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.

• Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on the serving platter. Mash the yolks into a fine crumble.Add mayonnaise, English mustard paste ,salt, and pepper, and blend well.

• Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika or chilli flakes and serve .
