Kosambari Salad

I got few friends asking me the recipe of the South Indian salad I made the other day … so here it is .

To make Kosambari Salad
you need … .
.
Carrot
Cucumber
soaked Moong dal
Coriander leaves
Green chilli
Lemon juice
Olive oil
Salt
Mustard seeds paste ( I used Kasundi )
and
a pinch Of hing .


Mix all the ingredients well and garnish with chopped coriander .. Slice / dice / make strips of the veggies like you want .
I got creative with the potato peeler and made strips out of carrot & cucumber.
And the proportion of ingredients depends on individual taste and requirements .

Basa fish in mustard 🐟🍴

Ingredients:

Mustard paste ( fresh or bottled) 

Few mustard seeds 

Green chillies

Medium pieces of basa fish 

Mustard oil 

Onions made into paste in the grinder 

Ginger Garlic paste 

Turmeric 

Red Chilli powder 

Salt to taste 
Method : 
Marinade the fish pieces in salt , turmeric & red chilli powder and keep aside for some time 


In a pan heat mustard oil and fry the marinated fish until it turns golden.


In the same pan and the remaining oil crack few mustard seeds and fry the onion, ginger & garlic paste . Add the green chillies and also pinch of turmeric , salt and a dash of chilli powder . Now add the mustard paste. 


Put the fried fish pieces in the mix and cook for 10 to 15 mins in medium flame also add 1/2 a cup of warm water and further let all the ingredients blend well and fully cooked.Your yummy mustard fish is ready to be enjoyed with steaming hot rice .


 

CHICKEN STROGANOFF

Russia has a large ethnic and cultural diversity due to its vast area which leads to different kinds of cooking traditions. It being one of the coldest countries the use of grains like wheat, millet, barley & rye and meats like beef, chicken and fish in its preparations is extensive and specially prepared to keep them warm.
Russian vodka and beer have a large following all over the world and so does this yummylacious chicken dish called STROGANOFF ..
INGREDIENTS

• 500 grams chicken breast, cleaned and cut into cubes

• 1 teaspoon paprika

• 6 cloves of garlic, minced

• 2 tablespoons all purpose flour

• 1 large onion, chopped

• 2 tablespoons butter

• 1 tablespoon olive oil

• 2 tablespoons Worcestershire sauce

• 3 tablespoons ketchup

• 2 tablespoons English mustard paste

• 1 cup crushed or puréed tomatoes

• 1/2 a cup red wine

• 1/2 a cup Cream

• Salt to taste

• Chopped coriander to garnish
INSTRUCTIONS

1. In a large bowl, mix the chicken cubes with the salt, the paprika and the flour until all the chicken is coated.

2. In a large skillet over medium high heat, heat the olive oil and the butter and sauté the onion and garlic until translucent

3. Add the chicken and cook until the chicken is browned on all sides

4. Add the Worcestershire sauce and the red wine

5. Add ketchup , mustard paste and cook for a minute and also add the crushed tomatoes and stir until everything blends together

6. Check to see if the chicken is cooked through. If it isn’t, lower the heat and let it simmer until the chicken is done. If it is, stir in the cream and let the stroganoff cook .

7. Sprinkle some chopped coriander to garnish and serve hot over a bed of pan fried noodles or pasta !!

Kidney Bean Salad .. Go Vegan !! 

Sumptuous and filling, this kidney bean salad is simple yet delicious. It’s packed with fiber and protein and makes a wonderful Weight Watchers dish for lunch or dinner and easy to prepare .

Ingredients:

• kidney beans, boiled ,drained and rinsed

• 1 large onion chopped

• Fresh green beans cut into medium pieces and blanched

• Corn kennels blanched

• Coriander chopped

• Tomatoes chopped or diced

• Fruit of your choice ( I used apples here)

• 1 tbsp olive oil

• Mayonnaise (a dash of it )

• A tiny amount of Lemon juice

• Salt and pepper to taste

• Mixed Dry herbs


Instructions:

1. Place all the ingredients in a serving bowl.

2. Add in olive oil,lemon juice, mayonnaise, salt & pepper. Toss to combine. Garnish with mixed dry herbs .

Masala Squid Rings 

INGREDIENTS :

500 gms Squid cleaned and cut into medium rings or if using frozen ready to cook packeted ones it comes already cut into rings and should be thoroughly thawed (here I am using ready to cook breaded squid rings )

2 Chopped onion

2 Chopped tomatoes or puréed

2 teaspoons Ginger- garlic paste

1/2 teaspoon Pepper powder

¼ teaspoon Cinnamon powder

2 teaspoons Coriander powder

1 teaspoon Chilli powder

1/2 teaspoon Turmeric powder

1/2 teaspoon Garam masala powder to taste Salt to taste

Oil
PREPARATION :


Heat oil in a pan to fry the squid rings and keep aside. Add chopped onion. Saute till they turn almost brown in colour. Add the ginger-garlic paste .Then add all the spice powders and saute for a minute. Add tomatoes and cook till oil separates. Add the squid and mix well. Cover and cook for a minute. Add salt. Also add half a cup warm water .Remove the lid and cook till the water content evaporates and we get a thick consistency .. the squid is done. Switch off heat. Transfer to a serving dish and serve with fried rice or steamed rice .

Grilled Chicken legs in Soy sauce 🍗🍗

Ingredients :
Chicken Legs 

Soy sauce 

Mayonnaise 

Barbecue sauce 

Salt & Pepper 

Paprika powder 

Olive Oil 

Butter 

Veggies of choice for stir fry 
In the marinade use ⤵️

Soy sauce 

Mayonnaise 

Barbecue sauce 

Salt 

Pepper 

Paprika powder 
✅For best results marinade overnight . 

Procedure for cooking ⤵️

Heat oil in a skillet pan & fry the marinated chicken legs until golden brown.

In a baking dish place the fried chicken pieces & pour the remaining marinade mixture evenly into it & Grill until done . 
Melt butter in a pan to Stir fry veggies as per your choice & serve with the sizzling chicken legs !!

All you need is 👇🏻

Salami slices

Cheese slices

Onions finely chopped

Chilly flakes

Mixed dry herbs as per choice

Mint leaves for garnish

And tooth picks to hold it together .

Bake and Grill Chicken Masala 🍗🌶🍎

Ingredients :

   chicken pieces (leg and breast)

   plain yogurt

  fresh tomato purée 

  ginger paste

  garlic paste

  garam masala powder

  paprika powder

  red chillie powder to taste

  vinegar 

  vegetable oil 

  chaat masala

  lemon juice

  cumin powder

  coriander powder

  turmeric powder

   salt to taste 

   kasuri methi 

Directions : 

 1. Add all ingrediants into a large mixing bowl and add the chicken pieces to the marinade and keep aside in the refrigerator for 4 hours or so .

 2. Place the marinated chicken on a baking tray / dish 

 3. Bake in the microwave oven for 20 to 30 mins (keep turning sides of the chicken pieces so that all sides are cooked evenly)

 4. Sprinkle Kasuri Methi and Grill for 2 more minutes 

 5. You are ready to serve Yummy chicken masala 🤗

Ingredients
eggs

mayonnaise

yellow english mustard paste

salt

black pepper

chilli flakes or paprika powder for the garnish

Directions :

• Place eggs in a single layer in a saucepan and cover with enough water that there’s 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.

• Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on the serving platter. Mash the yolks into a fine crumble.Add mayonnaise, English mustard paste ,salt, and pepper, and blend well.

• Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika or chilli flakes and serve .
