Kosambari Salad

I got few friends asking me the recipe of the South Indian salad I made the other day … so here it is .

To make Kosambari Salad
you need … .
.
Carrot
Cucumber
soaked Moong dal
Coriander leaves
Green chilli
Lemon juice
Olive oil
Salt
Mustard seeds paste ( I used Kasundi )
and
a pinch Of hing .


Mix all the ingredients well and garnish with chopped coriander .. Slice / dice / make strips of the veggies like you want .
I got creative with the potato peeler and made strips out of carrot & cucumber.
And the proportion of ingredients depends on individual taste and requirements .

Chicken Tawa Masala 

Ingredients for Chicken Tawa Masala Recipe
 • Chicken Leg and breast pieces marinated for two hours in turmeric powder, salt, red chilli powder,fresh 1/2 a lemon squeezed ,jeera powder

 • Oil 2 to 3 tablespoons

 • jeera powder 1 teaspoon

 • Garlic chopped 2 to 3 pods

 • Onion finely chopped 1/2 cup

 • Green chillies diced 2 or 3

 • Red chilli powder 1/2 teaspoon

 • Salt to taste

 • 1 large tomato chopped

 • Garam masala powder 1 teaspoon 
 

 • Butter 1 teaspoon

 • Chaat masala 1/2 teaspoon

 • Grated ginger 1 teaspoon 

Method : 

Heat oil in a Tawa/pan and fry the marinated chicken pieces until golden brown . Add chopped onions , garlic , tomatoes and green chillies to it and also the spices . Stir well so that the masala and the chicken blends into each other . Cooked in low flame for sometime till the meat is done. 


Serve hot with roti / nun/paratha .

Chicken cooked with pumpkin and tomatoes .. 

Ingredients : 

500 grams chicken leg and breasts 

Pumpkin boiled and puréed ( 1/4 of a medium pumpkin ) 

2 Potatoes cut into halves 

2 Tomatoes puréed 

2 large Onions chopped 

Ginger garlic paste 

Salt to taste 

Red chilli powder 1/2 tspn

Turmeric powder 1/2 tspn 

Cumin powder 1 tspn

Coriander powder 1/2 tspn

Garam masala powder 1 tspn 

Chicken masala 1/2 tspn 

Mustard oil 

Fresh coriander for garnish 
For the marinade : 


Mix all the above spice (red chilli ,turmeric ,cumin, coriander,garam masala,chicken masala and 2 table spoon mustard oil to the chicken pieces and potatoes .keep aside for an hour or so .
Cooking procedure : 
Heat mustard oil in a cooking pot and add finely chopped onions and ginger garlic paste and fry until golden brown . Now add the puréed pumpkin and tomatoes. 


Add the marinated chicken and potatoes into the pot and mix well. In a medium flame cover the pot with its lid and let the chicken cook in the sumptuous gravy . Add 1/2 a cup warm water and cook until the chicken is fully done . 
Garnish with fresh coriander and serve with rotis or steamed rice . #eathealthy

Spicy Indian Fish Curry 🌶🐟🌶🐟🌶

Ingredients :

Fish pieces
Fresh puréed tomatoes

Potatoes cut into wedges

Turmeric powder

Red chilli powder

Cumin powder

Coriander powder

Salt to taste

Bay leaf

Green chillies

Ginger garlic paste

Finely chopped onions

One cup water

Fresh coriander for garnish
Method :

Marinade fish pieces in fish Masala, salt , turmeric powder and keep aside for an hour .
In a Pan heat mustard oil and fry the fish & potato pieces till both sides are crisp . Remove fried fish and potatoes from pan.
Reheat the oil .Add bay leaf ,slit green chillies ,chopped onions , ginger garlic paste and fry until golden brown . Add the spices turmeric,red chilli powder, cumin powder,coriander powder , salt and fry it further .

Now add the puréed tomato to the mix.

Add one cup warm water & bring to boil .
Finally add the fried fish pieces & potatoes and cook till all the ingredients blend well .
Garnish with fresh coriander and sever hot with plain steamed rice or lemon rice . Happy Cooking !!
